with every shark attack not every one of them brings gore and blood but when a human attacks a shark, gore and blood happens all the time.

Actually, that is a possible scene. The teeth of a Great White Shark can Clamp on very powerfully, so the blood may not get spilled out very fast. Remember, this was slomo, not normal time. The narration said itself that this lasts near a second, so the blood wouldn't have time to spill out due to the gravity pull of the teeth into the seal during its downfall that fast. So, this MAY as well be a real seal, or, just because results coudn't pop up, they placed a decoy.

That's a decoy used by camera teams to capture this kind of behaviour. The way you can tell is that there was NO blood when the Great White hit - if that had been a real seal, the sea would have gone red. Most Great Whites of this size weigh around the same as a luxury SUV; imagine one colliding with a living animal, even minus teeth and jaws, and you'd get the same result.
